Unplanned Post: “Everything but the Kitchen Sink” Style Chicken Tagine

It’s been a rough few weeks. It’s the end of term which means loads of grading and deadlines (both for students and faculty). There are departmental and institutional deadlines due to different processes we are going through. *Cue world’s smallest violin playing a sad, sad song.*

But I came home today and thought, you know, apart from everything else… (1) I need to use some of my vegetables, (2) I need protein, and (3) I have some time… so… pull out the tagine and here comes “everything but the kitchen sink”-style chicken tagine.
Tagine1 Carrots, ginger, garlic, onions, lemons, parsley, mint, olive oil, water and some herbs and seasonings + 2 1/2 hours.
Tagine 2 Nice way to end off the day. And in the words of L.M. Montgomery via Anne Shirley “Tomorrow is a new day with no mistakes in it.” For now, back to reading and grading.
